new favorite comfort food



Its been crazy busy around here but I thought I would stop by with some good, hot food. This is Mushroom and Sun-Dried Tomato Risotto and it is to die for. I could eat it every day until spring. The recipe is from Vegan with a Vengeance by Isa Moskowitz.

I generally receive a few new cookbooks each Christmas and after a couple of years of getting some duds, I began keeping a list throughout the year and checking them out of the library or giving them a once-over at the bookstore to see if they would make it to the big wish list. This one is definitely on my list. Do you hear me, Santa?

I've had risotto before but this is my first time making it. I've always heard it requires quite a bit of babysitting and with my short attention span and penchant for multi-tasking, I honestly didn't think that had what it takes.

It really wasn't bad. It's kind of like doing dishes or waiting for the washer to quit spinning, you know, that mindless stuff that allows you to travel to see where the rice is grown or figure out what you need from the next trip to the grocery store. I think I spaced out for about twenty minutes and then read a paperback the other ten.

It was well worth all the standing and stirring. So creamy and delicious. The earthy flavors of the shitake and crimini mushrooms pair well with the sun-dried tomato, rosemary and thyme.

Hearty soups or homemade mac n cheese have long been my "go to" foods when dealing with everything from chilly days to colds to a bruised ego. Now I have a new friend.

I also "go to" mac and cheese. I am also known to turn to a sympathetic bowl of mashed potatoes in times of strife...

Mmmm, I love risotto. That looks great!

Much like nearly everything else worth buying, I have a hard time finding arborio rice around here though. I've been itching to try the pea risotto like Gordon Ramsay makes. :)
